Raw Vanilla – Perfect Blueberry Chia Pudding

Another quick and easy, but impressive breakfast, snack, or dessert. Get the many benefits of chia seeds by including them in ice cream, bread, pudding, salads, crackers, etc. I plan to serve this delicious parfait to many dinner guests who are not familiar with RAW, and I am sure they will love it.

If you’re not a fan of coconut, none of us think this tastes like coconut at all. The young coconut meat gives it a nice body and creamy base, but vanilla and blueberries are tasted … that’s it !!!

Vanilla – Perfect Blueberry Chia

For 6

1 1/2 cups young Thai coconut meat

1 1/2 cups coconut water (or filtered water)

1 1/2 cups cashews, soaked 2 to 4 hours

5 drops of medicinal flower vanilla extract (1/2 – 1 teaspoon of liquid extract)

3 tablespoons honey (or yacon syrup) to taste

pinch of sea salt

1 teaspoon sunflower lecithin (optional)

2 drops of medicinal flower cranberry extract (optional)

1 1/2 cup blueberries

1/4 cup +2 tablespoons chia seeds (add as needed)

Blend the coconut, coconut water, and cashews until very creamy.

Add vanilla, salt, sweetener, lecithin and blend.

For half of the mixture in a bowl.

Add the blueberries to the mixture in the blender and blend until creamy.

Stop in a separate container.

Add 2-3 tablespoons of chia seeds to the vanilla mixture, stir, and allow to steep.

Add 1/4 cup chia seeds to the blueberry mixture, stir, and allow to steep.

Let stand about 15 minutes, stirring once or twice.

Place the layers in a perfect glass. Refrigerate for 30 minutes or more and serve.
